Karachi Tandoor House opened in 1998 as a single-tandoor BBQ shop on Tariq Road. Today, three of our grandchildren still grind the masala by hand each morning, the same way our grandfather did — black cardamom, Kashmiri chili, and a whisper of fennel. We don't speed-cook. A leg of mutton sits in yogurt for 14 hours before it sees flame. The biryani rice rests under a wet cloth for 20 minutes after dum. If you've waited a few extra minutes for your order, that's why.
